Wine production was thought to have originated in areas around what is now Iran as early as 6000 BC, however recent discoveries in China seem to indicate a fermentation of grapes and rice as early as 7000 BC.
Wine today is produced by fermenting crushed grapes through different types of yeast. The yeast converts the natural sugars found in the grapes into alcohol. The type of wine produced depends on the variety of grape and strains of yeast used in its production.
In non-European countries a broader definition of wine includes any beverage with fermentation based on the conversion of sugar to alcohol. As a result fruit wines such as strawberry wine or apple wine and rice wines such as sake are included in the wine category, however world wide only a small percentage of the wine market recognizes their inclusion.
The classification and sale of wine is heavily regulated world-wide. The majority of wine is classified one of two ways. European wines tend to be classified by region while non-European wines tend to be classified by grape. Wine connoisseurs put great emphasis on "Vintage". For a wine to be considered and labeled as "Vintage" it must be produced from grapes grown in a particular year from a particular region.

2 Bottles Red Wine (750m)
1/2cup Triple Sec
1/4cup Tequila
1/4cup Sweet Vermouth
1/4cup Lime Juice
Sugar to Taste
2cups 7-up

Sangria #2 - Serves 4
1 bottle Red Wine
3 strips Orange Zest
3 strips Lemon Zest
1 1/2 TBSP Sugar
Juice of 4 Oranges
Juice of 2 Lemons
3cups Club Soda
Garnish w/ Mint Leaves
